Happy Thanksgiving – 2007

Ok, First off Happy Thanksgiving to all of my 360º family out there in Yahooland. I hope everyone is having a great day, even those of you that aren’t celebrating Thanksgiving today. I think it was Kwika that requested my Grated Sweet Potato recipe. Since I still have it pulled out from last night I decided to share it. Everyone have a wonderful day, eat lots of turkey and enjoy your family.

Grated Sweet Potato Pudding

2 lbs Sweet Potato, cleaned & grated (not shredded)
4 tbs salted butter (1/2 a stick) melted

1 1/2 cups Granulated Sugar

3 large eggs, room temp

1 (12 oz) can of evaporated milk

1 cup whole milk

1/2 tsp ground cinnamon
1/2 tsp allspice

1/2 tsp nutmeg

1 tsp vanilla

The zest of 1 1/2 lemons or 1/2 tsp lemon extract

Preheat the oven to 375º. Combine the sweet potatoes and melted butter in a large bowl. In a separate bowl whisk together the sugar, eggs until uniform. Add this to the sweet potato mixture and stir til blended. Gradually whisk in both milks, cinnamon, allspice, nutmeg, vanilla, and lemon zest. Pour into the casserole dish. Bake stirring well at least twice during the cooking until the potatoes are tender and the top is lightly browned, about an hour. Remove from the oven and let stand at least 5 minutes before you serve. Hope ya’ll enjoy this recipe as much as my husband seems to lol.
